Vegan Thanksgiving Dishes by Tia Blanco

Ingredients:
STUFFING
1/2 an onion
4 sticks of celery
1 carrot
1/4 cup of cranberries
2-3 tbs of butter
8 oz of beyond beef
3 cups of veggie broth
I recommend sprouts vegan corn bread stuffing mix or Boudins Sourdough Stuffing mix (you can find both of these at sprouts)
Or you can make your own breading and seasoning:
1.5 teaspoons sea salt
3 tablespoons ground sage
2 teaspoons thyme
1.5 teaspoons oregano
1 teaspoon pepper

GREEN BEAN CASSEROLE
8 oz of mushrooms
1/2 of an onion
2-3 tbs of butter
2 tbs of flour
1 cup of veggie broth
2 cups of unsweetened almond milk
1/4 cup of liquid aminos (brags)
1tbs of minced garlic
24 oz of green beans
1/4 cup of slivered almonds
Pepper to taste
2-3 cups of fried onion
Sliced almonds (optional)

PUMPKIN DESSERT
* 1 c pumpkin puree
* 6 Tbsp olive or canola oil
* 1 tsp vanilla
* 1 c flour
* 1 c sugar
* ¼ tsp cinnamon
* 1 tsp baking powder
* ½ tsp baking soda
* 3 Tbsp vegan butter
* 2 Tbsp vegan cream cheese
* ½ tsp vanilla
* ½ Tbsp soy milk
* 1 c powdered sugar
